At 75 calories per cup, this root veggie is not only a great way to fit in necessities like potassium, folate and fiber, it's also a source of vitamin C, calcium and iron. And it's versatile! You can devour beets boiled, baked, pureed, pickled—and served hot or cold (they do a lovely job in cold bean salads). But if you're buying canned, beet-eater beware, says Hendel. "Beets in a can are packed with lots of salt, so rinse them. If you're boiling them, peel them after cooking to prevent bleeding."
