| | Hearts of Palm and Mandarin Salad
Take a vacation from ordinary greens with an exotic twist on your lunchtime salad. Mandarin oranges add a perky zing that boosts not only your mood, but also your vitamin C. You may not have had time for a tropical getaway on your lunch hour, but with the healing properties of citrus flavanones, anthocyanins and polyphenols, you just might feel like you did.
- 1/4 cup fat-free buttermilk
- 1/2 tablespoon fresh lemon juice
- 1/2 tablespoon olive oil
- 1/2 tablespoon minced shallots
- 1/2 tablespoon minced fresh dill
- 1/2 tablespoon minced fresh parsley
- Salt and black pepper
- 1 pound fresh baby spinach, rinsed well, dried and stems removed
- 1 can hearts of palm, cut crosswise into 1/2-inch rings
- 2 mandarin oranges, peeled and segmented
- 1/3 cup pine nuts, toasted
Whisk the buttermilk, lemon juice and oil together. Add the shallots, dill, parsley, salt and pepper. In a large salad bowl, combine the baby spinach and hearts of palm. Toss with the dressing. Arrange the mandarin segments on top and sprinkle with pine nuts.
