    Giada's Lightened-Up (Low-Fat/Low-Cholesterol) Tiramisu

    Curb Your Cravings
Daily Tip for Thursday, January 1, 2009

    Giada's Lightened-Up Tiramisu

Take it from nutritionist Dr. Madelyn Fernstrom, "Every healthy lifestyle should include a little room for indulgence." We could not agree more. And there's almost no indulgence yummier than a little slice of Giada De Laurentiis' lightened-up tiramisu (i.e., heaven).
    • 3 egg yolks
    • 1/2 cup Egg Beaters
    • 3 tablespoons sugar
    • 1 pound light cream cheese
    • 1 1/2 cups espresso
    • 2 teaspoons rum
    • 24 ladyfingers
    • 1/4 cup shaved chocolate
    • 2 tablespoons cocoa powder
Beat egg yolks, Egg Beaters and sugar together until thick and pale. Add cream cheese and beat until smooth. Add 1 tablespoon of the espresso and mix until combined. In a small, shallow dish, mix remaining espresso and rum. Dip each ladyfinger into mixture (only about 5 seconds to avoid getting soggy). Arrange half the ladyfingers in 9x13-inch baking dish; break in half to fill bottom if necessary. Spread half the cheese mixture over ladyfingers. Arrange another layer of soaked ladyfingers, and top with remaining cheese mixture. Cover and refrigerate at least 1 hour, up to 8 hours. Sprinkle with chocolate shavings and cocoa powder before serving.

Per serving (serves 10): 300 calories
